1 Scope

This standard applies to milk and condensed cream with sugar (hereinafter – the product) obtained by partial removal of water from skim or normalized, or whole cow’s milk or cream, sugar canning, intended for direct consumption and for industrial processing.

Requirements, ensuring the safety of the product, as set out in 5.1.4, 5.1.5, the quality requirements in 5.1.2, 5.1.3, labelling requirements in 5.3.

3 Terms and definitions

This standard applies the terms established [1]-[5] and other normative acts of the States that have adopted the standard applicable in terms of marking, quality and safety of milk and dairy products.

4 Classification

Product depending on the mass fraction of fat divided:

on skimmed condensed milk with sugar;

– partly skimmed condensed milk with sugar;

– sweetened whole condensed milk with sugar;

– sweetened condensed cream with sugar.

5 Technical requirements

5.1 Key indicators and characteristics

5.1.1 the Product manufacture in accordance with the requirements of this standard technological instructions, compliance with the requirements of sanitary rules and norms and hygienic standards, technical regulations or normative legal acts acting on the territory of States that have adopted the standard.

5.1.2 the Product organoleptic characteristics must meet the requirements specified in table 1.

Note – the Specific values of the mass fraction of fat milk is partly skimmed sweetened condensed within the specified limits set by the manufacturer in technological instructions of the manufacturer, the actual content of the mass fraction of fat must be at least installed.

5.1.4 acid phosphatase in pasteurized milk intended for the production of a product is not allowed.

5.1.5 In terms of safety (the content of potentially hazardous substances and micro-organisms) the product must conform to [1], [4], as well as the established sanitary rules and norms, hygienic standards, technical regulations or normative legal acts acting on the territory of States that have adopted the standard.

5.1.6 Contents of antioxidants and stabilizers in the product shall not exceed the permissible levels established [5] or the legislative and regulatory legal acts of States that have adopted a standard consistent with the requirements of [5].

5.2 Requirements for raw materials

5.2.1 Raw materials used to manufacture the product must meet the requirements set [1], [4], [5] or legislative and regulatory legal acts of States that have adopted a standard consistent with the requirements [1], [4], [5].

5.2.2 For the manufacture of the product using the following raw materials:

– the raw cow milk according to GOST 31449 acidity of 16°T 20°T, normative and technical documents in cow milk, in force in the territory of States that have adopted the standard;

cow’s milk is pasteurized – raw materials according to GOST 32922, normative and technical documents operating in the territory of States that have adopted the standard;

– skimmed milk – raw materials according to GOST 31658, normative and technical documents operating in the territory of States that have adopted the standard;

– condensed milk – raw materials on the normative and technical documents operating in the territory of States that have adopted the standard;

cream – the raw material without coarse taste and odor according to normative and technical documents operating in the territory of States that have adopted the standard;

– sugar according to GOST 21 chromaticity of 0.8 unit and a mass fraction of reducing substances (in terms of dry substance) not more than 0,050%, and the normative technical documents in force in the territory of States that have adopted the standard;

– a white crystalline sugar according to GOST 31895, normative and technical documents operating in the territory of States that have adopted the standard;

– milk sugar edible crystalline GOST 33567, normative and technical documents operating in the territory of States that have adopted the standard;

antioxidants (used in the manufacture of partially skimmed milk condensed with sugar, sweetened whole condensed milk with sugar condensed cream with sugar):

– ascorbic acid (E300) according to normative and technical documents operating in the territory of States that have adopted the standard;

– sodium ascorbate (Е301) according to normative and technical documents operating in the territory of States that have adopted the standard;

– potassium ascorbate (Е303) according to normative and technical documents operating in the territory of States that have adopted the standard;

– dihydroquercetin according to GOST 33504 with a mass fraction of pure dihydroquercetin in dry matter not less than 90%, the normative and technical documents operating in the territory of States that have adopted the standard;

– stabilizers:

– sodium of disodium phosphate 12-water (Е339) at 4172 GOST, GOST 31725, normative and technical documents operating in the territory of States that have adopted the standard;

– sodium citrate 5,5-water (E331) according to GOST 22280, normative and technical documents operating in the territory of States that have adopted the standard;

– potassium phosphate disodium 3-water (Е340) 2493 according to GOST, GOST 31687, normative and technical documents operating in the territory of States that have adopted the standard;

– potassium citrate 1-water (Е332) according to GOST 5538, normative and technical documents operating in the territory of States that have adopted the standard;

– drinking water according to GOST 2874, normative and technical documents operating in the territory of States that have adopted the standard.

5.3 Marking

5.3.1 Labelling of consumer and transport packaging in which product is directly placed, is carried out in accordance with [2], [4] or by the technical regulations, legislative and regulatory legal acts applicable in the territory of States that have adopted a standard consistent with the requirements of [2], [4].

In the product name indicate the particular value of the mass fraction of fat (in percent).

5.3.2 Marking group, or reusable transport packaging, transport package, in accordance with [2], [4] with the application of warning labels or manipulation signs: “Protect from sunlight”, “Outside temperature”, “Protect from moisture” according to GOST 14192, normative and technical documents operating in the territory of States that have adopted the standard.

5.4 Packaging

5.4.1 Packaging materials, consumer and transport packaging, used for packaging product shall meet the requirements [3] or regulations in force in the territory of States that have adopted the standard, not inconsistent with [3], and must ensure the safety quality and product safety when transporting, storing and implementation.

5.4.2 Product is Packed in consumer packaging with subsequent packing into the transport container or directly into the transport package.

5.4.4 Transport packets formed according to GOST 23285 and GOST 26663.

5.4.5 Stacking of the transport package is carried out so that the markings are visible for at least one unit of group package and/or transport packaging with each side of the transport package.

Stacking of the transport package is carried out in a manner ensuring the safety of the lower ranks of the group packing and/or transport packaging, without deformation.

6 acceptance Rules

6.1 Rules of acceptance GOST 26809.1.

6.2 To verify that this product meet the requirements of this standard carry out acceptance in accordance with GOST 26809.1 and periodic testing.

6.3 acceptance tests carried out by sampling for each batch of product for compliance with the requirements of this standard: the quality packaging, correct marking, the net weight of the product, organoleptic and physico-chemical indicators.

6.4 Periodic testing carried out according to the security parameters (the content of toxic elements, mycotoxins, antibiotics, pesticides, radionuclides, microbiological indices, the presence of acid phosphatase in pasteurized mix, intended for the production of the product) in accordance with the production control program.

Dioxins, melamine, genetically modified organisms determined in case of reasonable assumptions about their possible presence.

7 control Methods

7.1 Selection and preparation of samples for analysis – according to GOST 26809.1, GOST 26929, 32164 GOST, GOST 32901.

The selection and preparation of samples for analysis, determination of organoleptic, physico-chemical and microbiological parameters, the determination of the safety performance of the product is carried out in relation to the condensed dairy canned food.

7.2 the Quality of packing and correct marking, determine the net weight, organoleptic characteristics according to GOST 29245.

7.3 determination of the mass fraction of fat – according to GOST 29247.

7.4 determination of the mass fraction of moisture – according to GOST 30305.1.

7.5 Mass percent of dry milk solids HSMA , %, is calculated by the formula

W – mass fraction of moisture in the product, %;

Determination of the percentage of lactic acid is carried out by calculation: 1 °T corresponds to 0,009% of lactic acid.

7.10 Mass fraction of protein in dry skim milk residue HB, %, is calculated by the formula

Determination of the mass fraction of total protein in the product according to GOST 30648.2 in relation to dairy products for baby food. The value of the conversion factor the mass fraction of nitrogen to mass fraction of total protein is of 6.38.
