Surface-active substances (surfactants) are chemical compounds capable of adsorption due to the positive change of the phase and energy of interaction at various interfaces: liquid – air, liquid – solid, oil – water.

Surfactants – substances with asymmetric molecular structure, the molecules of which contain one or more hydrophobic radicals and one or more hydrophilic groups. This structure determines the surface activity of the molecules of surface-active substances, i.e. the ability to concentrate at interfaces section, thereby changing the properties of the system.
